Air Fryer Sweet Potatoes and Brussels Sprouts

It seems like we are all on a mission to add more veggies to our diet! I know I get a lot of requests for more veggie recipes, but what’s important to me is that they are not only healthy, but also amazingly delicious!

Now that I have an air fryer, creating veggie recipes has been even easier.  I no longer have to heat up the oven or stress about soggy veggie from a pan.  Just toss the veggies with a tiny bit of oil and seasoning, and in minutes you can have a healthy, nutrient packed side dish that is very tasty as well.

These sweet potatoes and Brussels sprouts cook together perfectly in the air fryer and the flavor combo is just right for fall and winter dishes.

How to make Brussels sprouts and sweet potatoes in the air fryer:

  1. You’ll need to wash the sweet potatoes and remove the skin and cut into small chunks around 1/2 inch in size (pro tip: weigh out a little more sweet potato than you need, cut in half and place flat end on cutting board.  Use knife to remove peel quickly.  You’ll waste a tiny bit, but save a lot of time over using a veggie peeler)
  2. Cut ends from Brussels sprouts and cut into quarters lengthwise (if small sprouts you can just cut in half)
  3. Toss in bowl with oil and seasoning
  4. Add to air fryer basket and air fry at 380 degrees until tender (10-15 minutes)

Why is this the perfect veggie combo?

  • Brussels sprouts have lots of fiber and vitamins and have a nutty and savory flavor.  They can be bitter but if cooked and seasoned correctly, are delicious.  The outer leaves get nice and crispy while the insides are tender.
  • There are many varieties of sweet potatoes and each have different combos of vitamins and minerals.  There are tender while still holding their shape and their slightly sweet flavor and meaty texture pairs well with Brussels sprouts.
  • Both of these veggies pair very well with a simple seasoning of salt and chipotle chili powder.  This chili powder is a bit spicy and offsets the sweet and bitter flavors of the veggies for a delicious result.

How to cook veggies in the air fryer:

  • Depending on the veggie, you’ll need either a quick spray of oil or a tad more oil to coat them.  To get our brussels spouts and sweet potatoes tender we will need to toss with a bit more oil before adding them to the air fryer 
  • Also be sure to add any seasonings to the veggies before putting in the basket.  This will help with seasonings stick instead of falling through the basket
  • Any extra moisture will fall to the bottom of the air fryer basket, so be sure to check and toss often to ensure they don’t burn.
  • While many recipes call for preheating the air fryer, I rarely do and didn’t for this recipe.

Other common FAQ’s about Air Fryer Sweet Potatoes and Brussels Sprouts:

  • You won’t be able to meal prep and freeze or freeze leftovers, so best to plan on making them during the few days you will want to eat them
  • They are perfect for meal prep for the week and can be kept in an air tight container in the fridge for up to 4 days (these are my favorite containers).
  • They also make a great side dish for many main dishes including: meatloaf, salmon and pork chops.

Equipment

Ingredients

  • 1 pound sweet potatoes peeled and diced into 1/2 inch cubes
  • 1 pound Brussels sprouts stem removed and quartered
  • 1/4 cup avocado oil
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Add diced potatoes and quartered brussels sprouts to large mixing bowl
  • Toss with avocado oil and seasonings
  • Add to air fryer basket and set to 380 degrees
  • Cook, tossing occasionally, until cooked to desired tenderness (about 10-15 minutes)
  • Veggies are done when they are lightly browned and can be pierced easily with a fork

Notes

  • This recipes uses a bit more oil than most air fryer recipes in order to get the veggies tender.  Excess oil will drip into bottom of pan.
  • Toss with seasoning before adding to air fryer
  • Adjust chipotle chili powder to suit your preference for spice.  These are slightly spicy as made

  1. Make this for my family with a Chimmurri flank steak .They we’re making fun of me for paring sweet potatoes & Brussels sprouts.When the dish was plated the first thing that was gone were the sweet potatoes & Brussels sprouts.The apologized and said this was a heavenly pairing.

  2. Using the Ninja Foodi and it needs a whole lot longer that 10 – 15 mins. I diced very small and after 20 mins it’s all very raw. Good flavor though.
