Easy Weekday Breakfast Potatoes

One of my favorite meal prep recipes is breakfast potatoes! These Easy Weekday Breakfast Potatoes are the ultimate filling breakfast and perfect to serve with eggs or other favorite breakfast foods!

I love eating these with poached eggs for a warm delicious breakfast that will stick with me all day.  This breakfast potato recipe essentially involves taking those already cooked potatoes, cubing, seasoning and sautéing them until they are nice and crispy!! Perfect for a cozy weekend breakfast, or a breakfast that will sustain you for those busy workdays.

Easy Weekday Breakfast potatoes will be made from whole potatoes being steamed in Instant Pot

Making the potatoes:

You can start off with making potatoes in any of the following ways!

  • baked
  • microwaved
  • grilled
  • steamed in the pressure cooker

I made them in my Instant Pot because it was such a quick and easy way to make up a big batch and I really like how they turn out, but you could just as easily make extra when you are baking or grilling dinner.

Best potatoes to use for Easy Weekday Breakfast Potatoes:

Not all potatoes are the same.  The typical baking potatoes or the ones you would use for traditional mashed potatoes are russets, which won’t work as well for this recipe.  Instead I’d suggest:

  • Yukon gold
  • red potatoes
  • white creamer potatoes
  • dutch baby potatoes

Or essentially something from that variety, basically a firmer potatoes with a creamier texture.

A cast iron skillet is great for this recipe! I pretty much suggest that everyone have one because they work well for so many things, are very versatile and inexpensive.

Also, keep on hand some of your favorite seasoning blends, and change up this recipe with a wide choice of flavors.  For just the basics, stick with a single dried herb.  I usually go for dill, but rosemary and thyme are also delicious.

Ingredients

  • 1 1/2 pounds gold potatoes see notes
  • 1 tablespoon olive oil
  • 1 teaspoon seasoned pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon dried dill or other favorite seasoning

Instructions

  • See notes for cooking potatoes
  • Cool or chill cooked potatoes
  • Cut into bite sized cubes
  • Heat oil in skillet over medium high heat
  • Add potatoes and seasoning and cook until crispy and heated through

Notes

To make potatoes in Instant Pot: scrub potatoes and leave whole and place on steamer basket or trivet in pot.  Add 1 cup of water to bottom and place on steam setting for 10-15 minutes (depending on size of potatoes) per pot manufacturer instructions.

  1. I had no idea you could take already cooked potatoes and turn them into breakfast potatoes. I usually just bake potatoes in bulk and then get sick of eating them the same way towards the end. This is totally perfect!

    I love potatoes made anyway but these ones look so roasty and comforting. I love the addition of dill as well! I will be happy to have this breakfast, lunch and dinner! haha

  3. I love using leftover potatoes for home fries! Like you said, they really keep you full all day! I love dill I haven’t added dill to them! I’ll have to try that!
