What is Cajun Seasoning?

You know that unique flavor that you find while dining on the local cuisine in Louisiana? That’s Cajun Seasoning! Generally speaking, it’s a savory blend of garlic, peppers, and paprika (which gives it the rusty red color). Most people change theirs up to make it “special.”

My Cajun Seasoning uses a more traditional flavor blend. Although they are similar, this Cajun Seasoning blend is different from old bay seasoning, which has a milder flavor.

Ingredients

Which spices do I use to make Cajun Seasoning? I’ve taken the guesswork out of making Cajun seasoned dishes. Simply follow this link to my Cajun Seasoning and make your own blend to have on hand. Of course, you can also use stoe-bought.

Can I make Cajun Chicken Bites gluten-free or dairy-free? Yes! You can substitute an equal amount of gluten-free flour for the regular variety. Miyokos is my favorite dairy free butter. Again, substitute equal amounts of it for regular butter. Your Cajun Chicken Bites will still fry up nicely.

Preparation

Why do you coat the chicken with flour? When you fry chicken that’s been dredged in flour, the flour soaks up extra moisture, makes sure the seasonings stick to the chicken, and gives it a nice crispy coating. So, don’t skip the flour!

How should I fry the chicken? I love making Cajun Chicken Bites in a cast iron skillet. I feel it gives the better results than using standard non-stick skillets.

Do I have to make Cajun Chicken Bites in a skillet? No, you can make Cajun Chicken Bites in an air fryer. Just toss the chicken with olive oil and seasonings, then cook in air fryer basket at 380 degrees for 8-10 minutes.

Pro Tips

Should I cover or uncover the skillet when I fry my Cajun Chicken Bites? Cover the chicken bites a the beginning of cook time. That helps the chicken cook evenly and all the way through. Toward the end of cook time, take the lid off of the skillet. That will make your Cajun Chicken Bites crisp up.

How often do I turn the Chicken Bites while frying them? Use tongs to turn the chicken bites every 1 to 2 minutes. This will help them cook evenly.
