If you are totally over pumpkin at this point, have I got a treat for you!  How about a homemade chocolate cake filled with homemade caramel and topped with the most delicious made-from-scratch whipped topping?!  I can’t think of many people that would say no to that!  Admission…. baking is not really my thing.  Too much measuring, too much following rules.  But, that being said, if you are going to go for it, go for it.  Making a cake or cupcakes from scratch may be a little more work, but it’s just so totally worth the effort.  And as far as cakes go, this one was really fairly simple and was a huge hit with my family.  This actually makes a smaller cake perfect for an after dinner dessert or small party.

I don’t have a huge sweet tooth, but I have to admit looking at these pictures is making me crave that rich chocolate taste again!  Use a good quality cocoa powder to get a good quality tasting chocolate taste.

Ingredients

    For cake:
  • 3/4 cup flour
  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/3 cup canola oil
  • 2 teaspoons vanilla
  • 1/2 cup whole milk
  • For caramel:
  • 4 tablespoon butter
  • ½ cup brown sugar
  • ¼ cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • For frosting:
  • 1.5 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup cocoa

Instructions

  1. Add dry ingredients to large bowl
  2. Using stand or hand mixer, slowly mix in eggs, canola oil, vanilla and milk until mixed
  3. Pour into a greased 8x8 or similar pan
  4. Bake at 350 for 25-30 minutes
  5. Remove cake and use a chopstick or handle of a wooden spoon to poke holes all around the cake
  6. In a saucepan, melt butter
  7. Stir in brown sugar and cream and let come to bubbling for 2-3 minutes
  8. Remove from heat and stir in salt
  9. Pour caramel all over cake letting it soak into the holes you made
  10. In a large bowl using hand mixer or stand mixer with whisk attachment beat together cream, sugar, vanilla and cocoa until stiff peaks form
  11. Spread on top of cake
  12. Refrigerate until ready to serve, and store any leftovers tightly covered in refrigerator
