Chocolate Toffee Bits Icebox Cake

Have you ever had an icebox cake? This dessert is perfect for summer because there is no baking required!! This Chocolate Toffee Bits Icebox Cake is layered with pudding, whipped cream and toffee bits for a rich and delicious dessert that can be made in minutes!

This is certainly a departure from my usual instant pot, air fryer and other cooking gadget type recipes, but I feel it’s still a good fit! Why? Because this dessert is so easy to make that it doesn’t require any cooking at all, and therefore will go perfectly with any quick and easy dinners you have planned! Because we could all use a delicious dessert once in a while, right?  I’ve made many versions of icebox cake in my life (remember the pumpkin version), and this Chocolate Toffee Bit Icebox Cake is quite possibly the easiest yet arguably tastiest of all.  With layers of vanilla pudding, homemade whipped cream, graham crackers and toffee bits, it comes together quickly for a rich and decadent dessert.

What is icebox cake?

As you probably know, before the days of electricity, a refrigerator was an icebox! I gave my trusty friend Wikipedia an ask, and they told me all about the fact that icebox cakes were originally made with wafers and whipped cream! Over time, the’ve evolved to include other versions with graham crackers and more, and can include so many yummy options!

The whole idea is to create a dessert that can be chilled and ready to serve without baking.  This makes it perfect for summer BBQ’s, taking to a friend, or even having on hand for company to stop by.  So easy and so easy to customize with your favorite flavors.

How to make icebox cake:

  • homemade whipped cream is important here, any store bought will have other ingredients that could leave you with less than amazing results
  • you can make boxed pudding for a shortcut (what I did) or make homemade
  • create the cake by layering graham crackers, pudding, whipped cream and candy bit over and over until you get to the top of your dish
  • I used a 9×13 casserole dish, but feel free to adjust!  You can simply break apart the graham crackers to fit your dish

Can I swap/substitute ingredients?

Yes! Change the vanilla pudding to chocolate! Use butterfinger bits or other candy in place of toffee bits.  Use chocolate graham crackers instead of honey.  Just be sure to make homemade whipped cream because it’s by far the best part of this cake.

How long will icebox cake keep?

It takes about 2 hours of chilling time for icebox cake to be ready to eat.  After that, be sure to store all leftovers in the fridge tightly covered.  It will then keep for 2-3 days before it gets way to soggy to eat, but it’s unlikely you will have leftovers sitting around that long anyway!

Ingredients

  • 5.1 oz vanilla pudding mix
  • 3 cups whole milk
  • 3 cups heavy cream
  • 2/3 cup confectioners sugar
  • 2 teaspoons pure vanilla extract
  • 21 full sheets graham crackers
  • 8 oz milk chocolate toffee baking bits

Instructions

  • Using handheld mixer, mix pudding mix and milk in bowl according to package directions and place in fridge until remaining ingredients ready to assemble
  • In another large bowl, use a hand mixer with a whipping attachemnt to whip together cream, powdered sugar and vanilla for 3-4 minutes until cream forms stiff peaks
  • Add 1/2 cup whipped cream in bottom of 9x13 casserole dish
  • Top with 3-4 graham crackers in an even layer across the dish then top with 1/2 of the pudding and 1/3 of the toffee bits and 1/3 of the whipped cream
  • Repeat layer
  • For the final layer, add graham crackers, whipped cream then top with toffee bits
  • Place in fridge for 2 hours to chill before serving
  • Tightly cover any leftovers and store in fridge up to 3 days
