Easy Gluten Free Meatloaf

A simple meatloaf recipe that is gluten and dairy free so it can be enjoyed by all! This is the perfect base recipe for creating a delicious meatloaf and is simple enough to make for a weeknight dinner.

Just because you are gluten-free doesn’t mean you shouldn’t get to enjoy a delicious meatloaf! I’ve tested and retested and adapted my favorite meatloaf recipe to make a gluten-free version that might even be better than the original.

About meatloaf…

It’s safe to say that meatloaf has been around for quite some time, and pretty much every country/culture has it’s own version.

While ground beef is the traditional base, it’s often made with other mixtures and combinations of ground meat, such as turkey, pork, chicken, seafood and more.

It can be cooked on a tray or in a loaf pan and may include any number of different fillings, toppings or sauces.

How to make meatloaf gluten free:

Over the years I’ve developed several tricks for making the best meatloaf, and one of them involves using soaked panko breadcrumbs. When I set out to make a gluten-free version this is where I started.

I quickly found that the ratios needed would be a bit different but that the same concepts applied. In my opinion, soaked panko, even if gluten-free, makes the best meatloaf texture.

Other meatloaf ingredients:

  • I’ve made this recipe with both only ground beef and a ground beef/pork mixture and I find the beef/pork combo gives best flavor results
  • besides using gluten-free breadcrumbs, you can also use dairy-free milk as an equal substitution to make this recipe dairy-free as well
  • eggs – the yolks to add flavor and the whites to help bind the meat
  • seasoning – I like an all-purpose seasoning, like this one, to keep it simple
  • BBQ sauce – for extra flavor and moisture when cooking

More meatloaf tips…

  • line your cookie sheet with foil or parchment for easy cleanup
  • ensure your cookie sheet has a deep lip to contain any grease, or place on a second larger sheet to catch any spills
  • let meatloaf cool for at least 15 minutes before slicing
  • sub the pork with more beef or with ground turkey if desired (but note it may change your cooking times so please check meatloaf temp after 15 minutes in the final step)

Ingredients

  • 1/4 cup gluten free panko breadcrumbs
  • 1/4 cup milk dairy free if you prefer
  • 1 pounds ground beef
  • 1 pound ground pork
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon all-purpose seasoning
  • 1/4 cup BBQ Sauce gluten-free

Instructions

  • Mix panko and milk and set aside for 5 minutes
  • Mix ground beef, pork, seasonings, egg and soaked panko in bowl until just combined
  • Place on cookie sheet lined with parchment
  • Bake at 350 degrees for 30 minutes
  • Brush sauce over meatloaf and return to oven for 20-30 minutes or until meatloaf reaches internal temp of 165 degrees
  • Let rest 15 minutes before slicing

Notes

Important Notes about this recipe:
  • ensure all seasoning, sauces, etc. are gluten-free if needed
  • add additional milk as needed to ensure breadcrumbs are fully soaked before adding to meat
  • let rest at least 15 minutes before slicing
