Instant Pot BBQ Chicken

Highlights

This is a basic recipe that can be dressed up by changing out your choice of BBQ sauce. 
 
The Instant Pot is great for making chicken that turns out tender and juicy without a lot of extra work.
 
This chicken is perfect on it’s own but even better served up atop a bed of rice, in a taco shell or on top of a crisp bed of romaine as a salad.  Also perfect for leftovers.
 

Ingredient Notes

  • I prefer making this with boneless skinless chicken breasts, but boneless skinless chicken thighs will work too
  • Use chicken broth for best flavor, but water can be used in a pinch
  • Use any BBQ sauce you love. I prefer either Sweet Baby Ray’s or if I’m trying to be a bit healthier then I use Primal Kitchens.

Preparation Notes

  • Add the chicken, broth and half of the sauce to the Instant Pot. The rest of the BBQ sauce will get added later.
  • If your chicken breasts are around 5-6 oz, then 12 minutes on high pressure will be enough. If they are thicker, you may need to bump the time up to 15 minutes.
  • Let the Instant Pot release pressure naturally for 10 minutes when cooking meat
  • Remove the chicken from broth and shred it 
  • You can shred it finely or leave it in bigger chunks, whichever you desire
  • Mix in the other 1/2 of the BBQ or as much as desired and serve with more sauce as a drizzle if desired

  • Feel free to double the recipe if you are feeding a large group or want leftovers

How To Prep Ahead

  • Add chicken and broth to a freezer safe container or zipper bag
  • Store in fridge up to 3 days or freezer up to 3 months
  • To cook from frozen add 5 extra minutes of cook time
  • Continue with recipe as written after pressure cooking is complete

How To Store Leftovers

  • Let cool completely then store in air tight containers in fridge up to 3 days or freezer for 3 months

Ingredients

  • 2 pounds boneless skinless chicken breast
  • 2 cups chicken broth
  • 1 cup BBQ sauce

Instructions

  • Add chicken, broth and half of BBQ sauce to Instant Pot
  • Cover, seal and set to high pressure for 12 minutes
  • Allow a 10 minute natural pressure release before turning valve to release remaining pressure
  • Remove chicken from broth to a separate bowl and shred using forks
  • Add another 1/2 cup BBQ sauce and stir to combine adding more if desired
  • Serve with additional bbq sauce or as desired

Notes

  • Double the recipe to feed a large group or want leftovers
  • Prep ahead:  Add chicken + broth to zipper bag, store in freezer
  • Cook from frozen:  Add 5 extra minutes of cook time, continue with recipe as written after pressure cooking is complete
  • Store in air tight containers, fridge for 3 days/freezer 3 months

  1. In the picture it definitely looks like the chicken breasts were seasoned as well as adding the liquid. What were they seasoned with?

  2. I don’t use my Instant Pot enough, if doubling the recipe, do I need to increase the cook time for the chicken?
