Instant Pot Sneaky Veggie Spaghetti

Honestly… What family doesn’t love a spaghetti dinner?  It’s just one of those comfort foods that everyone enjoys.
 
Making spaghetti and sauce in an instant pot is SO MUCH easier than dealing with boiling water and anxiously watching cook times on the stove.
 
Spaghetti cooks perfectly in an Instant Pot.   There’s no need to babysit a pot of boiling water or lug that pot of water to the sink in order for it to drain.
 
Vegetables cook right into my Sneaky Veggie Spaghetti’s sauce.  It’s a great way to add nutrients to your picky eaters’ diets–they won’t even notice they’re eating vegetables!

Ingredients You’ll Need To Make Sneaky Veggie Spaghetti…

  • ground turkey
  • zucchini
  • carrots
  • celery stalks
  • spaghetti noodles
  • jarred tomato basil pasta sauce*
  • warm water

*Any favorite jarred pasta sauce will work! I like choosing ones that have no added sugar.  For even more added flavor, fire-roasted sauce varieties are a great option.

How To Make Sneaky Veggie Spaghetti Sauce In An Instant Pot…

  1. Following manufacturer instructions for pressure cooker, heat to saute and add ground meat.
  2. Sauté until fully cooked
  3. Finely dice (I suggest using a Ninja Chopper) veggies and add to cooked turkey
  4. Break apart noodles and add on top of meat and veggies
  5. Pour sauce and water over top and push noodles down so they are covered
  6. Add lid and set pot to high pressure for 6 minutes (*see notes)
  7. Allow for about a 5 minute natural pressure release, then carefully allow a quick release
  8. Stir and serve

*How long you need to cook your noodles depends on which pasta you choose. I used gluten-free Banza spaghetti and cooked it for 6 minutes. If you use regular thick spaghetti, bump up the time to 8 minutes.

Pro Tips:

Sneaky Veggie Spaghetti uses a mix of vegetables that don’t have strong tastes.  Experiment with others in the sauce, just make sure they are finely chopped.
 
I recommend using a Ninja chopper to make easy work of getting those veggies finely chopped.  The Ninja chopper is my favorite kitchen appliance.

Instructions

Notes

  • Substitute other finely chopped veggies
