If I share about 600 photos of my favorite new recipe, would that be too much?  Okay, I’ll keep it to less than that, but I do think lots of photos is the way to go here!  The components that go into these tacos are so delicious alone, yet even more “oh so amazing” when put together and I just think you really need to see it all come together.  If you are a taco traditionalist, I do apologize.  However, I’m a taco nut, who thinks that pretty much any crazy combo that goes well together in some kind of tortilla, soft or crunchy, makes a true taco.  Whether that a good old fashioned beef taco, a spicy Asian style taco or even a Caribbean themed taco like we have today.

This recipe is super quick and simple to make.  Some tender pork, a homemade Jamaican Jerk spice blend and a nice hot sizzling pan takes care of most of the work.

Then we can ramp it up with a super simple cilantro lime slaw we whip up in no time.

Finally, some super easy already diced canned mango to top it off and you are well on your way to enjoying the best taco you’ve ever had (I’m sure I’ll say that about them all…. like I said, I’m kind of a taco nut).

Ingredients

  • 2 1/2 pound boneless pork roast or tenderloin
  • 2 tablespoons canola oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon all spice
  • 1/2 teaspoon chives
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 6 oz pineapple juice
  • 8oz prepackage shredded coleslaw mix
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 2 teaspoons rice vinegar
  • 1/2 teaspoon dried cilantro
  • 15 oz can diced mango, drained
  • Corn or flour tortillas

Instructions

  1. Slice pork into strips about 1 1/2 to 2 inches long
  2. Heat canola oil in skillet
  3. Mix together paprika, garlic powder, onion powder, salt, pepper, thyme, all spice, chives, ginger, cayenne and chili powder
  4. Add pork to skillet and toss with seasoning
  5. Saute until pork is lightly browned on each side
  6. Add pineapple juice and let simmer until pork is fully cooked and liquid reduces
  7. Mix together cabbage, mayo, sour cream, lime juice, sugar, vinegar and cilantro
  8. Refrigerate until ready to serve
  9. Serve tacos in corn or flour shells as desired topped with pork, coleslaw and mango
