Would you like to know a little something about me?  As much as I absolutely love to cook, and even to occasionally make elaborate meals, I hate cooking breakfast.  First thing in the morning, digging out pots and pans, spending time pulling together ingredients, not to mention all the clean-up.  No thank you!  Therefore, we either have a super easy breakfast (smoothies), a slow cooker breakfast, or when I actually have my act together, then we have easy heat-up breakfast that I made ahead of time and have ready to go in my fridge or freezer, just like these Make Ahead Southwest Breakfast Burritos!

And anything that starts with crispy tater tots and ends with tasty pepper jack cheese has to be good, right?  These are really so easy and can be customized to your families taste.

For maximum flavor impact I chose to brown up some breakfast sausage and scramble some eggs.  Then just to make myself feel even better about the whole thing, I sautéed up a few bell peppers to get some veggies going in there for a balanced meal.

Assemble it all in the middle of a big flour tortilla and roll up tight.  Wrap in plastic wrap or foil and then you can stick these in the fridge for a couple days or right into the freezer.  I love it that my teenager can grab one right out of the freezer and heat it up and be out the door in no time, and I don’t get left with a huge mess to clean up in the aftermath.  Especially because I prefer to get my dinner started in the slow cooker in the mornings… so who wants to worry about breakfast?!

Ingredients

  • 2 cups frozen tater tot crowns
  • 1 pound ground breakfast pork sausage
  • 8 eggs
  • 2 tablespoons heavy cream
  • 1 orange or red bell pepper
  • 8 flour burrito sized tortillas
  • 1 cup shredded pepper jack
  • salt & pepper

Instructions

  1. Cook tots according to package directions
  2. Cook ground sausage in skillet over medium high heat until no longer pink
  3. Drain and reserve grease and let sausage cool
  4. Beat eggs together with cream and add salt and pepper to taste
  5. Cook in skillet with a little of the grease from the sausage or with 1 tablespoon of butter until scrambled and fully cooked
  6. Remove eggs and add a little more butter or grease to skillet
  7. Remove ribs and seeds from peppers and chop
  8. Add to skillet and saute for a few minutes or until tender
  9. Assemble by adding tots, eggs, sausage, peppers and cheese to center of tortilla
  10. Fold in ends and roll tightly
  11. Wrap with plastic wrap or foil and store in large freezer bags in fridge for up to 2 days or in freezer for 3 months
  12. Heat burritos for 30 - 45 seconds on high or if frozen heat for 1 minute on half power then flip and heat another 30-45 seconds on high
