It’s that time of year, friends!!!  When entertaining season goes into high gear and we start eating all the food!  So fun, right?  We get to see people that we only see on special occasions, catch up with old friends and spend time with family.  Plus, the food is plenty and the drinks are flowing.  The only thing is, it can also be a little stressful, right?  Trying to come up with food to share or menus when you are the host.  Today I’ve got a simple solution, and it involves nachos.

I mean, do you know many people who could walk by a big old plate of chips piled with cheese, piled with chicken, piled with sour cream… you get the idea… and not dig in?!

This BBQ version couldn’t be much easier to make!  Just 5 ingredients into the slow cooker for  a few hours and you can go off and worry about other things rather than running by the store to grab yet another sad looking veggie tray.

Once the chicken is done, shred it up, pile it high on your favorite chips and top with cheese.  Lots of cheese.

Pop it in the oven just long enough for everything to get melty and then top it all off with extra BBQ sauce, ranch dressing, chopped onions and fresh cilantro.  I guarantee you set this in front of a bunch of hungry guests and it will be devoured in no time!  They don’t have to know how easy it was… let them be totally impressed with your amazing cooking skills!

Ingredients

  • 1 pound boneless skinless chicken
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 cup BBQ sauce, plus more for drizzle
  • 12 oz tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded marble jack cheese
  • 1/4 cup ranch dressing
  • 1/4 cup diced red onion
  • 1/4 cup sliced green onion
  • fresh chopped cilantro

Instructions

  1. Place chicken in slow cooker
  2. Whisk together paprika, cumin, garlic powder and 1/2 cup BBQ sauce
  3. Pour over chicken
  4. Cover and cook on high for 3-4 hours or low for 6-8
  5. Remove chicken and shred, return to slow cooker to soak up juices for 10 minutes
  6. Place chips on a parchment lined cookie sheet
  7. Top with chicken and cheese
  8. Place in oven (preheated to 425) for 5 minutes or until cheese is melted
  9. Top with more BBQ sauce, ranch dressing, onions and cilantro and serve immediately
