This is just a spin off the meatballs I made a long while back (that actually all started with the best hamburgers ever-I need to share that one with you too!). With a few basic ingredients and flavor combos you can make so many different meals! Just find some of your favorites! I’m totally hooked on the whole fruit and BBQ thing right now. Sweet + spicy = the best flavor combo ever! I’m know I’m going to make these again but next time I might try short ribs. These were so delicious! The first time I made them I used back ribs but they have so little meat that it was a lot of work to eat and we just kept wanting more! Using boneless ribs was the perfect option! How long do you grill ribs in foil?
- If you are going to smoke them like I recommend here, it’s going to be about 2-3 hours
- You’ll want to keep them in the foil until they reach an internal temperature of 160 degrees F (make sure you have a good thermometer)
- low and slow is the way to go there for tender juicy meat!
Blueberry Chipotle Smoked Ribs
- 2 pounds boneless beef ribs
- 1 teaspoon all purpose BBQ seasoning blend
- 1 cup BBQ sauce homemade or bottled
- 1/2 cup blueberry preserves no sugar added
- 1 tablespoon adobo sauce from canned chipotle peppers
- Preheat smoker to 225 degrees according to manufacturer instructions
- Season ribs with BBQ rub and place on grill
- Whisk together BBQ sauce, blueberry preserves and adobo sauce and store in fridge until ready to use
- Once ribs get to about 160 degrees internally (2-3 hours) wrap in foil and brush with BBQ sauce mixture
- Continue cooking until ribs reach internal temp of 200 degrees for most tender ribs
- Let rest 10-15 minutes before serving, brush with additional sauce as desired
