Love a delicious and fresh salad for lunch but just don’t have the time to make one everyday? Taco Salad in a Jar is your perfect solution! You can make it up on the weekend, put individual servings in a mason jar and have lunch all week. And it will be just as fresh the last day as it was the first.  I’m not even kidding, I forgot one in my fridge for 9 days and while I wouldn’t eat it at this point for food safety concerns, it actually looks just as fresh as ever.  I’ve always been skeptical of these mason jar salads when I’ve seen them on Pinterest, but I think it’s safe to say I’m converted! After trying them out myself I’m impressed enough to say that there will be a lot more of these salads in my future.

I am a huge believer in homemade salad dressings too, and this Cilantro Lime dressing is so simple yet so tasty you’ll practically want to drink it! If you are looking for a healthy way to dress your salad, this one is pretty good considering the base is greek yogurt and it’s thinned out using lime juice, vinegar and water.  If you are wanting to add some healthy fats to your diet, you can also drizzle in a little olive or avocado oil as well.  Just be sure to grab a nice fresh batch of cilantro since that’s what this salad dressing is all about!

Store any leftover dressing in a airtight container as well, and use as a drizzle over tacos or steak for dinner later in the week. It fresh and light and perfect for summer meals.

Ingredients

    For salad:
  • 2 heads romaine hearts
  • 1 cup grape tomatoes, sliced
  • 1 cup uncooked farro
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup corn kernels, thawed
  • For dressing:
  • 1 cup cilantro leaves
  • 1/2 cup greek yogurt
  • 2 tablespoons white wine vinegar
  • 2 tablespoons lime juice
  • 2 teaspoons jarred minced garlic
  • drizzle of honey
  • water or oil to thin

Instructions

  1. Wash and chop romaine hearts
  2. Cook farro according to package directions, then cool
  3. Cook ground beef in skillet until fully cooked and browned, add taco seasoning and water as needed, let cool
  4. Place all dressing ingredients except water into blender and blend until smooth, adding water (or oil if desired) until desired consistency is reached
  5. Assemble 4 mason jars by adding 2-4 tablespoons of dressing and then top with 1/4 of each of the following in this order: farro, corn, beef, tomatoes and chopped lettuce
  6. Seal jars and store in the fridge for up to 3 or 4 days
