1 pound boneless skinless chicken breasts 1/2 cup chicken broth 1/4 cup soy sauce or tamari 1/4 cup honey 2 tablespoons seedless blackberry jam 1 tablespoon minced garlic 1/2 teaspoon chili garlic sauce 1/2 teaspoon garlic powder 2 tablespoons cornstarch
Chop chicken into tiny bite sized pieces and add to Instant Pot
Whisk together remaining ingredients except for cornstarch and pour over chicken
Cover, seal and set to high pressure for 10 minutes
Allow 5 minute natural pressure release then perform quick release
Mix cornstarch with equal amount of water until smooth
Turn pot to sauce and cornstarch slurry
Let simmer until thickened and serve over steam rice or as desired
