Caramelized Pork Lo Mein

A delicious sweet and spicy pork tossed with fresh zucchini noodles for a healthy yet tasty treat.  Caramelized Pork Lo Mein is a quick and simple dinner to satisfy that take-out craving.

Ingredients

  • 1 pound boneless pork loin chops
  • 1 tablespoon olive oil
  • 8 oz sliced mushrooms
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon Sriracha
  • 2 pounds zucchini squash

Instructions

  • Dice pork loin into tiny bite sized pieces
  • Heat oil in skillet over medium high heat
  • Add pork and cook for 5-6 minutes
  • Add mushrooms and continue cooking until softened and pork is cooked through
  • Add brown sugar, soy sauce and Sriracha sauce to small bowl and whisk
  • Pour over pork in skillet
  • Spiralize zucchini and add to skillet
  • Continue cooking until sauce reduces and zucchini is tender
