Core and peel pineapple and slice
Cut peppers in half and remove ribs and seeds
Peel onion and slice into a few sections
Brush everything lightly with olive oil
Preheat grill to medium high and add pineapple, peppers and onion
Grill for about 2-3 minutes on each side until lightly browned or charred
Remove and let cool
Dice and add to bowl along with chopped cilantro, a drizzle of olive oil and lime juice
Add salt and pepper if desired
