Sweet Potato Breakfast Bowls
A breakfast that will truly sustain you! This bowl is filled with nutrition packed kale, sweet potatoes, tasty homemade sausage and topped off with an egg of your choice. Perfect for prepping ahead.

Heat olive oil in skillet over medium high heat and add kale
Saute until tender and add salt and red pepper flakes to taste
In another small skillet, cook two eggs to your liking, I prefer sunny side up
Layer bowls with cubed sweet potatoes, kale, sausage patties and top with a cooked egg
If prepping ahead, keep ingredients separate until ready to heat & eat
Soft or hard boiled eggs for Prep Ahead
Add extra veggies or eggs if desired
If swapping spinach for kale, drain any excess liquid so that your potatoes don’t get soggy
Add chopped garlic when cooking up the kale if desired.
