Whether you need a healthy meal for dinner or meal prepped lunches for the week, these Cajun Chicken and Sweet Potato Bowls will save you from the boring meal time rut!
In a large skillet heat olive oil over medium high heat
Add kale and stir occasionally as it cooks and wilts down, season with salt and garlic powder and add water 1 tablespoon at a time as needed to cook down and soften kale
Split cooked kale between two bowls and add half of the cajun chicken bites and half of the sweet potatoes to each bowl
Serve immediately or cover tightly and refrigerate for a later meal
