Quick & Easy Healthy Taco Bowls

When you need a quick and easy dinner that's totally customizable for each member of the family, how about this Quick and Easy Healthy Taco Bowl?  Full of delicious flavors and quick to throw together when you're rushed to make dinner!

Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons homemade taco seasoning
  • 2 tablespoons water
  • 12 oz frozen cauliflower rice
  • 1 tablespoon avocado oil
  • 12 oz frozen cubed sweet potatoes
  • 1 cup grape tomatoes

Instructions

  • Heat ground beef in skillet and brown until cooked through, breaking apart with spatula or hamburger chopper
  • Add taco seasoning and water and heat through, stirring to distribute evenly until water cooks off
  • Heat cauliflower in microwave according to package directions
  • Heat sweet potatoes in skillet with avocado oil until heated through and lightly browned 
  • Assemble bowls and top with fresh cilantro, sour cream, ranch dressing, salsa or as desired
