  • 2 pounds russet potatoes
  • 4 cups chicken broth
  • 1/4 cup flour
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 4 slices thick cut bacon cooked and crumbled


  1. Peel and cut potatoes into cubes and add to large dutch oven or other heavy bottomed pan along with broth

  2. Mix flour with 1/4 cup water and until smooth and stir into broth

  3. Add seasonings, salt and cream and stir to combine

  4. Bring to a boil for 5 minutes then reduce heat to a hard simmer for 20-25 minutes until potatoes are tender

  5. Serve soup topped with crumbled bacon or as desired

Recipe Notes

To make this meal vegetarian, simply omit bacon crumbles.
