Instant Pot Risotto

Think risotto is only for special meals or fancy occasions? Now you can have it any night of the week! My Instant Pot Risotto recipe is quick and basic and goes with just about any dinner.

Ingredients

  • 1 1/2 cups arborio rice
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 3 garlic cloves
  • 3 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 cup parmesan cheese

Instructions

  • Heat olive oil in pot on saute function
  • Add onion and garlic and saute until softened
  • Add everything but cheese to pot and cover and seal
  • Set to high pressure 6 minutes
  • Quick release and stir in cheese before serving
