Instant Pot Carrots

Carrots are an overlooked side dish when it comes to completing a delicious meal! These carrots are not only amazingly tasty, but cook in only 2 minutes! Why wouldn’t you want carrots with your dinner tonight?

Ingredients

  • 1 pound carrots
  • 1 cup water
  • 1/2 tablespoon butter
  • 1/2 tablespoon olive oil
  • 1/2 tablespoon honey
  • 1/4 teaspoon kosher salt
  • Fresh herbs for garnish

Instructions

  • Peel and slice carrots diagonally
  • Add water to bottom of Instant Pot
  • Place in steamer basket in Instant Pot and add carrots
  • Cover, seal and set to high pressure for 3 minutes
  • Once cooking time has completed, carefully turn valve to perform quick release
  • Carefully drain water and then turn pot to saute
  • Add butter and oil and return carrots to pot
  • Add honey and salt and saute for several minutes until lightly browned
  • Remove and garnish with fresh herbs

Notes

  • Honey can be left out
  • Use preferred herbs as a garnish (dried or fresh)
  • If using dill, saute it with the carrots
