Instant Pot Carrots
Carrots are an overlooked side dish when it comes to completing a delicious meal! These carrots are not only amazingly tasty, but cook in only 2 minutes! Why wouldn’t you want carrots with your dinner tonight?

1 pound carrots 1 cup water 1/2 tablespoon butter 1/2 tablespoon olive oil 1/2 tablespoon honey 1/4 teaspoon kosher salt Fresh herbs for garnish
Peel and slice carrots diagonally
Add water to bottom of Instant Pot
Place in steamer basket in Instant Pot and add carrots
Cover, seal and set to high pressure for 3 minutes
Once cooking time has completed, carefully turn valve to perform quick release
Carefully drain water and then turn pot to saute
Add butter and oil and return carrots to pot
Add honey and salt and saute for several minutes until lightly browned
Remove and garnish with fresh herbs
Honey can be left out
Use preferred herbs as a garnish (dried or fresh)
If using dill, saute it with the carrots
