Grab your air fryer and my easy meal prep taco meat and make these tasty low carb Air Fryer Taco Stuffed Zucchini Boats!

Ingredients

  • 1 large or 2 medium zucchini
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup taco meat
  • 2 oz shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced olives
  • 2 tablespoons sour cream

Instructions

  • Remove end from zucchini and slice in half lengthwise
  • Use a spoon to scoop out seeds and and make a hallow canal down the center
  • Drizzle with olive oil and salt and pepper
  • Place in air fryer at 380 degrees for 8-10 minutes until cooked through and crisp tender
  • Fill each “boat” with taco meat and cheese and return to air fryer for 1-2 minutes
  • Top with tomato, olives and sour cream or as desired

  • Meal prep taco meat 
  • Make ahead and reheat 
  • Customize toppings:  fresh cilantro, peppers, ranch dressing, etc.
