Ingredients

  • 10 oz baby spinach
  • 15 oz can quartered artichoke hearts drained
  • 8 oz whipped cream cheese
  • 1/2 cup sour cream
  • 1/2 cup chicken stock
  • 1/4 teaspoon red pepper flakes
  • 2 cups shredded cheddar
  • 1/2 cup shredded parmesan cheese

Instructions

  • Add spinach, artichoke hearts, cream cheese, sour cream, chicken stock and red pepper flakes to instant pot and stir to combine
  • Set to high pressure for 3 minutes
  • Once cooking time has finished, perform a quick release according to manufacturer’s instructions
  • Stir in  cheddar and parmesan cheese until melted
  • Serve with tortilla chips

Notes

  • Store leftovers in airtight container up to 3 days
  • To reheat, microwave stirring every few seconds
