Instant Pot Mashed Sweet Potatoes
If you're not a fan of those super sweet sweet potato casseroles, then these Instant Pot Mashed Sweet Potatoes will probably do the trick! This savory sweet potato dish is perfect for a holiday meal or a weeknight meal.

2 pounds sweet potatoes 1/4 cup butter regular or dairy free 2 oz cream cheese regular or dairy free 1/2 teaspoon herb and garlic seasoning 1/ teaspoon salt
Peel and dice potatoes
Place in Instant Pot and add enough water to cover
Seal and set to high pressure for 10 minutes
When cooking is completed, quick release the remaining pressure from the pot
Drain water and return potatoes to pot or to a large mixing bowl
Add remaining ingredients and mix with hand mixer or potato masher until smooth
Make dairy free-swap regular butter for dairy free
leave out herb and garlic seasoning for a less savory mashed sweet potato
start with a small amount of salt and add until desired level
