Instant Pot Mashed Sweet Potatoes

If you're not a fan of those super sweet sweet potato casseroles, then these Instant Pot Mashed Sweet Potatoes will probably do the trick! This savory sweet potato dish is perfect for a holiday meal or a weeknight meal.

Ingredients

  • 2 pounds sweet potatoes
  • 1/4 cup butter regular or dairy free
  • 2 oz cream cheese regular or dairy free
  • 1/2 teaspoon herb and garlic seasoning
  • 1/ teaspoon salt

Instructions

  • Peel and dice potatoes
  • Place in Instant Pot and add enough water to cover
  • Seal and set to high pressure for 10 minutes
  • When cooking is completed, quick release the remaining pressure from the pot
  • Drain water and return potatoes to pot or to a large mixing bowl
  • Add remaining ingredients and mix with hand mixer or potato masher until smooth

Notes

  • Make dairy free-swap regular butter for dairy free 
  • leave out herb and garlic seasoning for a less savory mashed sweet potato
  • start with a small amount of salt and add until desired level
