Air Fryer Scallops

Think scallops are tricky to make? Not any more! These Air Fryer Scallops are fool proof! Plus, they're wrapped in bacon. What could be better?

Ingredients

  • 12 oz frozen scallops thawed and patted dry
  • 16 slices about 2 oz precooked center cut bacon
  • 1 tablespoon olive oil
  • 2 teaspoons seafood or cajun seasoning

Instructions

  • Wrap one piece of bacon around edges of scallops securing with toothpick
  • Brush both sides with oil and sprinkle with seasoning
  • Place in air fryer basket in single layer
  • Cook at 400 degrees for 4 minutes, flip and continue cooking until cooked through until tender and opaque (about another 4 minutes)

Notes

  • using pre-cooked bacon is necessary so that it cooks at the proper rate with the scallops
  • I used cajun seasoning but you could use a seafood seasoning like old bay as well
  • use a meat thermometer to check the temp of the cooked scallops to ensure they don't overcook (aim for 140-150 degrees F).
