2 cups jasmine rice 1 3/4 cups water 2 tablespoons avocado oil 1 cup frozen peas and carrots thawed 1 small yellow onion diced 2 eggs lightly beaten 1/4 cup soy sauce or tamari 1 tablespoon fish sauce 1 teaspoon sesame oil green onions and sesame seeds for garnish optional
Rinse rice until water runs clear and drain well
Add to Instant Pot along with 1 3/4 cups water
Cover and set valve to seal
Set to high pressure for 4 minutes
Once cooking has completed allow 10 minutes for natural pressure release
After 10 minutes have passed, turn the valve to release remaining pressure
Push rice to one side of pot or remove and set aside and turn pot to saute
Add oil and once heated add veggies and onion
Saute for 3-4 minutes and push to side with rice
Add eggs and cook while stirring for 1-2 minutes
Stir everything together and saute for 2-3 minutes more, add additional oil if needed
Stir in soy sauce, fish sauce and sesame oil and cook while continuing to stir until headed through
Add leftover chicken or beef to make it a meal
Add more veggies if desired
Adjust the amount of fish sauce to your liking
