Ingredients

  • 1 1/2 pound ground chicken
  • 1/4 cup panko bread crumbs
  • 1/4 cup milk
  • 1 egg
  • 2 tablespoons buffalo sauce
  • 1/4 cup finely diced carrots
  • 1/4 cup finely diced celery

Instructions

  • Mix together panko and milk and set aside to soak for 5 minutes
  • Add soaked panko to remaining ingredients in bowl and mix together by hand until combined
  • Spray bottom of air fryer basket with avocado oil
  • Use a cookie scoop and roll into 32 equal sized meatballs (smaller than ping pong ball)
  • Place in single layer in air fryer basket and spray tops with additional oil (cook in 2 batches if needed)
  • Cook at 400 degrees for 8-10 minutes until cooked through (you may flip once if desired)
  • Toss with additional buffalo sauce that has been heated in microwave for 30 seconds

Notes

  • Use gluten free panko and dairy free milk if needed
  • Buffalo sauce is also called wing sauce, found in supermarkets next to BBQ sauce
  • Optional: saute carrots and celery for a few minutes before adding to meat mixture if not in tiny pieces - I like to use my Ninja mini chopper to finely dice
