Instant Pot Shredded Chicken Thighs
What's one of the smartest things you can do for yourself in the kitchen? Make up a batch of shredded chicken to have on hand for quick and easy meals! Boneless skinless chicken thighs cook up perfectly in the Instant Pot for amazingly simple meal prep.

3 pounds boneless skinless chicken thighs 3 cups chicken broth
Add chicken to Instant Pot
Add enough chicken broth to fully cover the chicken
Add lid, seal and set to high pressure for 12 minutes
Once cooking time has completed allow pressure to release naturally
Remove chicken breasts to separate bowl and shred using forks or mixer
Divide into desired serving sizes and store in air tight containers in fridge for up to 3 days or freezer up to 3 months
Use in desired recipes
Add 5 minutes to cooking time if using frozen thighs
Use bone broth instead of regular chicken stock for added nutrition
Use water if you don't have enough broth. Chicken needs to be covered with liquid for best cooking results.
