Air Fryer Peach Cobbler

Ingredients

  • 8 oz peaches peeled and sliced thin
  • 1 tablespoon tapioca flour
  • 2 oz sweetened condensed coconut milk
  • 1/4 cup brown sugar
  • 1/4 cup oats
  • 2 tablespoons almond flour
  • 1/8 teaspoon cinnamon
  • pinch of nutmeg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons dairy free butter I used Miyokos

Instructions

  • Spray an oven safe dish with a light coating of oil
  • Toss peaches with tapioca flour until evenly coated
  • Pour the condensed milk over and mix until combined
  • Place peaches in casserole dish
  • In a large mixing bowl combine remaining ingredients and mix until crumbly with a fork
  • Sprinkle over top of peaches
  • Place dish in air fryer basket
  • Cook at 390 degrees for 6 minutes until golden and bubbly

Notes

  • to ensure this recipe is dairy-free, use condensed coconut milk and dairy-free butter
  • to ensure this recipe is gluten-free, use gluten-free oats
  • best served warm, but if you have leftovers store in air-tight container in fridge up to 3 days. Reheat to serve.
  • if using frozen or thicker sliced peaches, reduce air-fryer temp after 6 minutes and continue cooking for 2-4 minutes until done
