Air Fryer Peach Cobbler

8 oz peaches peeled and sliced thin 1 tablespoon tapioca flour 2 oz sweetened condensed coconut milk 1/4 cup brown sugar 1/4 cup oats 2 tablespoons almond flour 1/8 teaspoon cinnamon pinch of nutmeg 1/2 teaspoon vanilla extract 2 tablespoons dairy free butter I used Miyokos
Spray an oven safe dish with a light coating of oil
Toss peaches with tapioca flour until evenly coated
Pour the condensed milk over and mix until combined
Place peaches in casserole dish
In a large mixing bowl combine remaining ingredients and mix until crumbly with a fork
Sprinkle over top of peaches
Place dish in air fryer basket
Cook at 390 degrees for 6 minutes until golden and bubbly
to ensure this recipe is dairy-free, use condensed coconut milk and dairy-free butter
to ensure this recipe is gluten-free, use gluten-free oats
best served warm, but if you have leftovers store in air-tight container in fridge up to 3 days. Reheat to serve.
if using frozen or thicker sliced peaches, reduce air-fryer temp after 6 minutes and continue cooking for 2-4 minutes until done
