Air fryer steak bites and potatoes are a simple dinner combination that feels fancier than your norm! Cut ribeye into cubes about 1 ½ - 2 inches in size
Cut potatoes into 1 to 1 ½-inch cubes
Stir together melted butter, olive oil, and seasonings
Toss ½ of butter mixture with potatoes
Add potatoes to air fryer basket and cook for 10 minutes
Toss remaining butter mixture with steak
Add steak to potatoes in the air fryer and continue cooking for 8 - 10 minutes until steak is to desired doneness and potatoes are tender on the inside

Store leftovers in an airtight container in the fridge for up to 3 days.
For the best texture, reheat in the air fryer at 375 ℉ for 3-5 minutes. Microwaving can also work, but it may dry out the steak.
Optional: For crispier potatoes, soak the potato cubes in cold water for 30 minutes, then pat dry thoroughly before cooking.
Avoid overcrowding the basket, and cook the steak and potatoes in batches if needed.
Cut the steak and potatoes into uniform sizes for even cooking.
