Ingredients

  • pounds boneless skinless chicken thighs about 6 thighs
  • 1 tablespoon olive oil
  • 1 tablespoon herb and garlic seasoning blend
  • 1 tablespoon Cajun seasoning blend
  • ½ cup BBQ sauce use your favorite brand or homemade

Instructions

  • Preheat grill to medium-high heat (about 400 ℉)
  • Pat chicken thighs dry with a paper towel
  • In a large bowl, drizzle chicken with olive oil and toss with herb and garlic seasoning and Cajun seasoning until well coated
  • Place chicken thighs directly on grill grates and cook for 4-5 minutes per side, flipping once, until internal temperature reaches 165 ℉
  • During the last 2-3 minutes of grilling, brush chicken with BBQ sauce and flip once more to let sauce caramelize
  • Remove chicken from grill and let rest for 5 minutes before serving

Notes

  • Store leftover chicken thighs in an airtight container in the fridge for up to 4 days. Reheat in the microwave (30-second intervals) or in a covered skillet with a splash of water to keep moist.
  • Avoid high heat for best results.
  • Chicken is fully cooked when it reaches an internal temperature of 165 ℉. Use an instant-read thermometer for accuracy.
  • Wait to brush on the BBQ sauce at the end to allow it to caramelize without burning.
  • Let the chicken rest at least 5 minutes before slicing or serving to preserve the juices.
