1 pound baby carrots 1 tablespoon olive oil ½ teaspoon salt ½ teaspoon freshly ground black pepper ½ teaspoon garlic powder 2 tablespoons butter melted 1 tablespoon honey 1 tablespoon fresh parsley finely chopped Salt to taste

Preheat air fryer to 380℉
Add baby carrots to a bowl, drizzle with olive oil, and sprinkle with salt, black pepper, and garlic powder, then toss until evenly coated
Place carrots in air fryer basket in a single layer
Air fry at 380℉ for 12 minutes, shake basket, then continue cooking for another 10-12 minutes, until carrots are tender and lightly caramelized
While carrots cook, stir together melted butter and honey
Transfer hot carrots to a serving bowl, and drizzle with honey butter, tossing gently to coat
Sprinkle with fresh parsley and salt to taste and serve immediately
Store leftovers in an airtight container in the fridge, along with any extra honey-butter glaze, for up to 4 days.
Reheat in the air fryer at 350℉ for 3-5 minutes to restore the roasted texture, or microwave if needed (texture will be softer).
Pat the carrots dry before tossing them with oil to produce a roasted texture.
Arrange the carrots in a single layer with space between for even cooking.
Shake the basket halfway through for even browning.
Carrots should be fork- tender and lightly caramelized.
Honey butter should be added after cooking.
Serve immediately for the best results.
