1 pound boneless pork loin chops 1 tablespoon olive oil 8 oz sliced mushrooms 1 tablespoon brown sugar 2 tablespoons soy sauce or tamari 1 teaspoon Sriracha 2 pounds zucchini squash
Dice pork loin into tiny bite sized pieces
Heat oil in skillet over medium high heat
Add pork and cook for 5-6 minutes
Add mushrooms and continue cooking until softened and pork is cooked through
Add brown sugar, soy sauce and Sriracha sauce to small bowl and whisk
Pour over pork in skillet
Spiralize zucchini and add to skillet
Continue cooking until sauce reduces and zucchini is tender
