Buffalo Chicken Quesadillas

Ingredients

  • 2 burrito sized flour tortillas
  • 6 oz leftover buffalo chicken
  • 1 tablespoon butter
  • 4 oz shredded cheddar cheese

Instructions

  • Layer 1 oz of cheese over half of each tortilla then top with 2 oz of chicken
  • Add another 1 oz of cheese and carefully fold in half
  • Heat butter in skillet until melted
  • Carefully add quesadillas to skillet, one at a time if needed, and cook 2-3 minutes until browned on one side
  • Flip and repeat
  • Let cool slightly before cutting in half

Notes

  • Best to use flour tortillas work best 
  • Shredded cheese from a block melts better than pre-shredded
  • Best dipping sauces - ranch or blue cheese
  • Add some finely chopped celery if desired
