My Buffalo Chicken Quesadillas recipe is a simple recipe that makes a delicious lunch, a quick dinner, or even a tasty after school snack. You could even make them as an appetizer for your next tailgate party as you watch the Big Game!
Buffalo Chicken Quesadillas are better than regular quesadillas and much more filling. They are packed with protein from the buffalo chicken and the different cheeses.

Ingredients You’ll Need To Make Buffalo Chicken Quesadillas:
- burrito sized flour tortillas *
- leftover buffalo chicken
- butter
- shredded cheddar cheese
*Gluten free tortillas can be used, so long as they are soft and pliable.
How To Make Buffalo Chicken Quesadillas…
- Layer 1 oz of cheese over half of each tortilla then top with 2 oz of chicken
- Add another 1 oz of cheese and carefully fold in half
- Heat butter in skillet until melted
- Carefully add quesadillas to skillet, one at a time if needed, and cook 2-3 minutes until browned on one side
- Flip and repeat
- Let cool slightly before cutting in half
Pro Tips:
Flour tortillas work best for quesadillas. You could also use gluten-free tortillas, so long as they are soft and pliable.
I prefer shredding my own cheese from the block as it melts much better than already shredded cheese from a bag.
Ranch or Blue Cheese make the best dipping sauces for Buffalo Chicken Quesadillas.
If you like blue cheese, you could also add a few crumbles in the with shredded cheddar.
Adding finely chopped celery to the chicken will give your quesadillas some added flare.
