  • Instant Pot Basmati Rice
  • Instant Pot Carnitas
  • Fresh Mango Salsa
  • Cheese, sour cream, avocado slices optional

Instructions

  • layer basmati rice, carnitas, and mango salsa in a bowl
  • top with your favorite toppings before serving

Notes

  • Make ahead and portion lunches/dinners for the week
  • Store in individual containers
  • If re-heating, store mango salsa separately.
  • Add lettuce to make it more filling
  • Optional toppings could include:  bell peppers, onions, tomatoes
