Carnitas Bowls are the perfect meal!  They’re healthy.  They’re filling.  And, they’re incredibly easy to make!
 
While in the Instant Pot, the fat is cooked out of the pork shoulder leaving a tender, lean meat that is loaded with protein and vitamins.  In fact, one serving of pork shoulder contains nearly 35% of the recommended daily amount of lean protein that a person needs to eat in order to maintain a healthy lifestyle.

Pro Tips..

Make your carnitas bowls stretch futher by adding lettuce to the meal.  Lettuce will also add extra volume and will be more filling. 

Adding tomatoes, onions, and bell peppers will also make Carnitas Bowls more filling and serve more people.  
 
Meal Prep for the week.  Store each portion in individual containers in the fridge. If you’re planning to your carnitas bowls, make sure you store the mango salsa separately.

  • Instant Pot Basmati Rice
  • Instant Pot Carnitas
  • Fresh Mango Salsa
  • Cheese, sour cream, avocado slices optional

Instructions

  • layer basmati rice, carnitas, and mango salsa in a bowl
  • top with your favorite toppings before serving

Notes

  • Make ahead and portion lunches/dinners for the week
