If you've ever wondered what to do with leftover salmon, it's time to try fresh salmon patties! Simple and quick to make and a perfect way to use up those leftovers!

2 cups leftover salmon 1 egg 1/4 cup flaxseed 2 tablespoons mayo (extra as needed) 1 tablespoon stone ground mustard 1 teaspoon dried dill 1/2 cup avocado oil
Mix all ingredients except avocado oil in bowl, add extra 1-2 tablespoons mayo as need to be able to form patties
Heat a thin layer of oil in small skillet over medium high heat
Form salmon mixture into 6 equal sized patties
Cook in two batches, for about 2-5 minutes on each side until lightly browned
Remove to paper towels to cool slightly before serving
