Marinated Tomatoes

This may be simple to make, but the flavor makes it seem like a fancy thing! These Marinated Tomatoes can made in less than 10 minutes and are perfect for adding depth and flavor to so many meals!

  • 8 oz grape tomatoes halved lengthwise
  • 2 teaspoons jarred minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon celtic salt or kosher salt or to taste


  • Toss together in a glass bowl until combined
  • Cover and refrigerate for at least 2 hours or overnight before serving


  • Use fresh herbs instead of dried, if desired
  • Optional:  red pepper flakes 
  • Substitute apple cider vinegar or lemon juice for rice vinegar
  • Substitute cherry tomatoes / heirloom tomatoes if desired
