Looking for a fresh summer treat?  Look no further than this blueberry salad.  It’s quick and easy to make… A healthy addition to your families meal rotation.  
 
The blueberries and goat cheese pair perfectly together.  Romaine lettuce and almonds add crunch, protein, and loads of flavor.  
 
Blueberries, almonds, and romaine lettuce are all anti-inflammatory foods.  They’re all packed with antioxidants and vitamins.   These types of foods are useful in managing asthma, rhumatoid arthritis, and Crohn’s disease, and various other diseases.

  •  hearts of romaine lettuce
  •  butter lettuce
  •  blueberries
  •  goat cheese crumbles (optional)
  •  sliced roasted almonds
  •  Prepared balsamic or lemon vinaigrette 

Hearts are the smaller, yellow, inside leaves of the romaine lettuce plant.  Look for unwilted leaves that have no black spots and you’ll find crunchy delicious lettuce for this blueberry salad.

Make sure the blueberries are ripe and sweet.  Look for blueberries that are firm, dry, plump, and smooth-skinned.  They should also have a silver-looking bloom and no leaves.

How To Make Blueberry Salad…

  1. Toss salad ingredients in large bowl
  2.  When ready to serve drizzle with or toss with desired amount of dressing

Pro Tips

Make sure you have ripe and sweet blueberries.  If they are mushy or have any mold on them, throw them out!  Frozen berries do not work well in this recipe. 
 
Use your favorite prepared balsamic vinaigrette.  My lemon vinaigrette is delicious with this salad.  It’s quick and easy to make and requires only 5 ingredients. 
 
Crumbling the goat cheese yourself from a log makes for creamier cheese.  However,  you can  save a little time by buying crumbled goat cheese in a tub.

Ingredients

  • 1 heart of romaine lettuce
  • 2 cups butter lettuce
  • 1/2 cup blueberries
  • 1/2 cup goat cheese crumbles optional
  • 1/4 cup sliced roasted almonds
  • Prepared balsamic or lemon vinaigrette
