Air Fryer Zucchini

When it comes to healthy, versatile foods, nothing beats zucchini! Zucchini is simple to make and cooks up perfectly in the air fryer. Cooking zucchini in an air fryer requires much less oil/fat and is therefore healthier than its deep fried or roasted counterparts.
Zucchini is full of potassium, Vitamin C, and lots of other vitamins and minerals. It’s also very easy to digest.
While zucchini is considered a summer squash, you’ll be able to find it year round at your local grocery store. It’s also rather easy to grow in your backyard garden.
Ingredients You’ll Need To Make Zucchini In An Air Fryer:
- zucchini
- herb and garlic seasoning
- shredded Parmesan
- avacado oil spray
How To Make Zucchini In An Air Fryer…

Remove ends from zucchini and slice in half lengthwise and then in half again lengthwise (quartered)

Spray each slice with avocado oil spray and sprinkle with seasoning

Place in single layer in air fryer basket

Cook at 380 degrees for 8-10 minutes

Sprinkle with Parmesan cheese before serving

- 2 medium zucchini
- 1 teaspoon herb and garlic seasoning
- 2 tablespoons finely shredded parmesan
- Avocado oil spray
Instructions
- Remove ends from zucchini and slice in half lengthwise and then in half again lengthwise (quartered)
- Spray each slice with avocado oil spray and sprinkle with seasoning
- Place in single layer in air fryer basket
- Cook at 380 degrees for 8-10 minutes
- Sprinkle with parmesan cheese before serving

- Store leftovers in airtight container in fridge for up to 3 days
