What’s To Love About This Recipe

  • This breakfast potato recipe is easy to prep ahead for the week and just takes a few minutes to assemble! Having some potatoes ready to go in the fridge is a simple way to add some heartiness to your breakfast and keep you full until lunchtime.
  • I find that potatoes are very flexible in the air fryer, so you can adjust the time and temperature however you need to get them just right.
  • Making potatoes in the air fryer is a much healthier option than packaged frozen potatoes with preservatives and unhealthy oils. You can still get the crispy texture and delicious flavor without breading and can adjust the seasonings however you like.
  • Mornings need to be mess-free! I love making my potatoes in the air fryer because it is so much easier to cook and clean up quickly than pan-frying or dealing with the oven.

Ingredients Needed  

  • Baby gold potatoes – Baby gold potatoes are slightly waxy which helps them keep their shape in smaller pieces. The skins and outer edges toast nicely in the air fryer, and they have a slightly buttery taste and texture.
  • Olive oil – Add some olive oil to roast the potatoes and achieve that golden crispiness when cooked.
  • Kosher salt – Kosher salt adds a little bit of texture and crunch to the potatoes and sticks well when tossed with olive oil.
  • Seasoned pepper  – Seasoned pepper is a slightly elevated version since it includes ground red pepper and sometimes a hint of sugar for sweetness. You can also use regular or coarse-ground black pepper.
  • Dried dill – I like the herby flavor of dried dill with baby gold potatoes, but you can use any of your other favorite dried herbs.

How To Make Air Fryer Breakfast Potatoes

  1. Quarter the potatoes or dice into small bite-sized pieces.
  2. Toss potatoes with the remaining ingredients in a bowl.
  1. Preheat the air fryer to 400 ℉.
  2. Cook for 12-15 minutes (tossing occasionally) until browned and crispy outside and tender inside.

Pro Tips

  • Chop or dice potatoes however you prefer, but make sure they are similar in size to ensure even cooking and doneness. Larger pieces will take longer to cook.
  • As long as you shake the basket occasionally, the potatoes will brown and crisp up – even if you have a few too many in the basket. 

Recipe Substitutions and Variations

  • For potatoes that are slightly browned and hold their shape, you’ll need to use a baby potato, red potato, Yukon gold potato, or something similar. A russet potato will not work since it can crumble due to the starch content.
  • Change up the seasonings however you like! You might use a seasoning blend that works with your other breakfast ingredients, such as Cajun seasoning, an herb and garlic blend, or smoky paprika.

How To Serve Air Fryer Breakfast Potatoes

Breakfast isn’t limited to just mornings! These would be a great addition to the first meal of your day or any time that you crave delicious breakfast food.

Serve them with a side of your favorite style of eggs or with strips of bacon. (Try out my method for How to Make Bacon in the Oven!) Add a bowl of fruit or yogurt and a glass of fresh orange juice and your day will be off to a great start.

Storing and Reheating

I love making a batch of potatoes ahead of time to reheat for breakfast the rest of the week!

Just cook them in the air fryer and save the leftovers in the fridge for 3-4 days. It’s easy to reheat and achieve the same crispy texture by popping them back in the air fryer for a few minutes while you make eggs, sausage, or other breakfast items.

Air Fryer Breakfast Potatoes FAQs 

  • Why do you soak potatoes in water before air frying? Some recipes may require soaking to remove starch, but for this recipe, there is no need to soak the potatoes. With baby gold potatoes, you want to keep the starch to achieve a slightly crispy texture. 
  • Why do my potatoes not get crispy in the air fryer? If the potatoes are not getting crispy, remove them and cook in smaller batches and/or increase the cooking temperature.
  • Should potatoes be peeled before air frying? No, the potatoes should not be peeled before air frying. One of the advantages of the air fryer is the texture and crispiness you can achieve on the potato skins.
