How do you make beef enchiladas in no time?
- use ground beef to allow you to cook up the filling quickly and get them into the oven
- use pre-made sauce or store bought to save time
- shred up a batch of cheese in advance so that you can assemble this quickly
Are authentic enchiladas made with corn or flour tortillas?
- corn is typically more traditional, but why not try flour too?
- flour tortillas work well in the recipe because they are thicker and hold up better to the filling
- this also helps make for a heartier meal!
What you’ll need to have on hand to make this recipe:

Did I calculate these right at 14 points?
yes, if you use regular tortillas. I love to use the Ole Extreme Wellness Whole Wheat tortillas. They are delicious and reduce the points to 11 per serving. You can also reduce the cheese to 4oz or use light cheese to further reduce points if desired.
I definitely prefer flour tortillas when I make enchiladas! Your recipe looks both easy and delicious! I’ve never added cream cheese to my enchiladas but I’m looking forward to trying it!

This was my first time to make enchiladas. They were great. I assumed it would be too much work and too fiddley. I was wrong! Different from what we eat in Tex-Mex restaurants here in the Houston area. Next time I’m going to make my own sauce and try corn tortillas. Why not?!
so glad you enjoyed!!
