Chicken Fajita Quesadillas are a flexible meal that can be made with other types of leftovers, not just chicken fajitas.
Chicken Fajita Quesadillas are a healthy option to feed your family on those all-too-common busy evenings. They’re filled with protein from the meat and cheese. However, unlike plain quesadillas, you get all of the nutritional benefits of grilled veggies.
Who doesn’t need more protein and veggies in their diet?
Ingredients You’ll Need To Make Chicken Fajita Quesadillas…
- 2 flour tortillas
- 4 oz leftover air fryer chicken fajitas
- 1 tablespoons butter
- 4 oz cup shredded cheese
Substitute gluten-free tortillas and/or dairy-free cheese–quesadillas are delicious either way!
How To Make Chicken Fajita Quesadillas…
- Layer cheese over each tortilla then add chicken and veggies
- Carefully fold in half
- Heat butter in skillet until melted
- Add quesadilla to skillet and cook for 2-3 minutes until browned on one side, flip and repeat

Chicken Fajita Quesadillas can be made gluten-free and dairy-free if you find yourself needing to feed someone with food allergies or sensitivities.
I’ve made these quesadillas with LaTortilla Factory Gluten free tortillas and Miyoko’s shredded cheddar with amazing results.
Let your quesadillas cool for a minute or two before slicing them into triangles. This will keep the cheese from falling out or becoming stringy. (Who wants that? Yuck!)
