How To Make Eggplant In The Air Fryer

  1. Cut off the ends and slice the eggplant into fry-sized sticks (about ½ inch thick). Lightly salt and let them sit for 15-20 minutes, then pat them dry with paper towels.

  1. In another bowl, mix panko, crushed chips, paprika, cayenne, garlic powder, and salt. Place in a mini-chopper or food processor and pulse until the mixture is blended and broken down into a coarse powder.
  1. Dip each eggplant fry into the egg, then coat in the panko and chip mixture, pressing lightly to adhere.
  1. Preheat the air fryer to 375 ℉, and spray the air fryer basket with avocado oil spray.
  2. Arrange the fries in a single layer in the air fryer (cook in batches if necessary), and lightly spray the tops with oil.
