Cajun Chicken and Sweet Potato Bowls

Ingredients
- 8 oz Cajun Chicken Bites
- 2 cups air fryer sweet potatoes
- 2 tablespoons olive oil
- 6 oz fresh chopped kale
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 2 tablespoons water
Instructions
- In a large skillet heat olive oil over medium high heat
- Add kale and stir occasionally as it cooks and wilts down, season with salt and garlic powder and add water 1 tablespoon at a time as needed to cook down and soften kale
- Split cooked kale between two bowls and add half of the cajun chicken bites and half of the sweet potatoes to each bowl
- Serve immediately or cover tightly and refrigerate for a later meal
