A classic family favorite in a fraction of the time! It might have taken your grandma all day to cook a delicious pot roast dinner, but Instant Pot Pot Roast is done in a fraction of the time!

A full meal cooked in one pot is the perfect time-saver for a busy evenings! Use your Instant Pot to create a healthy and hearty meal that will take the stress out of chaotic weekday mealtimes.

My Instant Pot Pot Roast is so simple to make! You’ll have time to get the family around the table a and catch up on life. It’s a simple recipe that even the kids can help with.

Pot Roast leftovers (if you have any) store easily and can be used in a variety of sandwiches, meal bowls, or even nachos! Use your imagination!

Ingredients You’ll Need To Make Pot Roast In Your Instant Pot…chuck roast

  • olive oil
  • herb and garlic seasoning
  • baby potatoes
  • carrots
  • chicken broth (or beef broth)
  • red wine *
  • tapioca pearls

*Optional

  • cut up chuck roast in an instant pot
  • carrots and potatoes in an instant pot

How To Make Pot Roast In Your Instant Pot…

  1. Cut chuck roast into 5-6 smaller chunks
  2. Heat pressure cooker on saute and add olive oil
  3. Sprinkle roast with seasoning
  4. Sear each side for several minutes until lightly browned
  5. Turn off pressure cooker
  6. Add remaining ingredients, cover and seal
  7. Set to high pressure for 40 minutes
  8. When cooking time completes, allow at least 10 minutes for natural pressure release before turning valve to release remaining pressure
  9. Remove roast, carrots and potatoes and whisk to combine gravy

Pro Tips…

If you’d like a thicker sauce, you can whisk 2 tablespoons cornstarch or tapioca flour with water and add that to the gravy. Just be sure to turn the Instant Pot to saute for a few minutes to finish cooking.

How long do you pressure cook a roast? While the general rule is about 20 minutes per pound, we are reducing the time here a bit by cutting the roast into smaller pieces. If you leave it in a larger chunk, I’d recommend at least 60-65 minutes for a 3 pound roast.

What is the best cut to use for pot roast? Chuck roast is best! It has a bit of fat to give it some extra flavor and will shred easily when properly cooked.

  • 1 1/2 cups chicken broth or beef broth
  • 1/2 cup red wine optional or use 2 cups broth
  • 2 tablespoons tapioca pearls

Instructions
