How do you cut up cauliflower?

  1. Wash the cauliflower with running water, then remove any leaves. 
  2. Cut the cauliflower head in half, then cut it into quarters.
  3. Finally, break down the pieces into even florets.

It’s important to keep the florets similar sizes to allow for even cooking in the air fryer. You will also want to make sure to dry the florets by blotting them with a paper towel, or laying them across a kitchen towel to soak up excess moisture. This helps the breading stick better and gets the crispiest bite!

Ingredients Needed

  • Cauliflower – Select one medium-sized head of fresh cauliflower to cut into bite-sized florets (a.k.a the “tree-shaped” bites!). Fresh cauliflower works best for maximum crispiness, but you can also use frozen if needed – just expect a softer texture.
  • Eggs – Lightly beaten egg wash helps the breadcrumbs and seasoning adhere to the florets.
  • Panko breadcrumbs – The breadcrumbs create a tender, crispy coating without adding too much heaviness, unlike other fried foods. Look for a gluten-free version of the breadcrumbs if needed. 
  • Lemon pepper seasoning – This bright, zesty blend complements the creamy ranch dip with plenty of flavor.
  • Garlic powder – A little garlic powder adds depth to the overall flavor.
  • Salt – Balance the seasonings with some salt to make the coating nice and savory.
  • Avocado oil spray – A light spray of avocado oil helps the florets and breading crisp up in the air fryer.

Sriracha Ranch Dip

  • Ranch dressing – Choose a bottled dressing or homemade dip for an easy, creamy base.
  • Sriracha – Sriracha adds a tangy heat that works with the lemon-pepper flavor. Customize the dip by adjusting this to taste – less is more! 
  • Lemon juice – As an optional step, add a splash of lemon juice to the dip for a brightness that brings it all together.

How To Make Air Fryer Cauliflower

  1. Preheat the air fryer to 380 ℉.
  2. In a shallow bowl, whisk the eggs. In another bowl, mix panko, lemon pepper, garlic powder, and salt.
  1. Dip cauliflower florets into the egg, then dredge them in the panko mixture until well coated.
  1. Place the florets in a single layer in the air fryer basket and lightly spray with avocado oil.

  1. Air-fry for 12-15 minutes until golden and crispy.

  1. Stir ranch dressing, sriracha, and lemon juice together to make a dipping sauce.

Pro Tips


  • Cut the cauliflower into evenly-sized florets so they cook at the same rate.
  • Don’t overcrowd the basket and work in batches if needed.
  • Drying the florets with a paper towel or blotting with a towel will help produce the crispiest bites.
  • Spray the florets lightly with oil for better browning.
  • Shake the basket halfway through if needed.
  • If preferred, you can add more seasoning to the cauliflower bites after cooking. Just add the florets to a serving plate and sprinkle the seasoning over the top. 
  • Adjust the sriracha amount based on spice preference.
  • The cauliflower bites will be crispiest when hot from the air fryer – serve immediately for best results!

Recipe Substitutions and Variations 

  • Frozen cauliflower can work with a couple of extra minutes of cooking time; however, it may not be as crisp.
  • These cauliflower bites are delicious with other seasoning options, too! Swap lemon pepper for Cajun seasoning or add a garlic Parmesan blend. Buffalo spice blends and taco seasoning are other super-flavorful options.
  • Oil helps brown the exterior of the cauliflower bites – any high smoke-point spray oil will work, such as avocado, olive, or canola oil.
  • Use gluten-free panko if needed.
  • Try using Greek yogurt to make a protein-rich, lower-calorie ranch dip.
  • If you need alternatives to spicy dip, try blue cheese dipping sauce, marinara, or honey mustard.
  • For a cheesy variation, sprinkle shredded or grated Parmesan over the florets before or after air-frying.

How To Best Store Leftovers

Fridge

Store leftover cauliflower in the fridge in an airtight container for up to 2-3 days. (Freezing is not recommended as the breading gets soggy.)

How To Best Reheat Leftovers

Reheat in the air fryer at 350 ℉ for 3-4 minutes to restore crispiness.
