Air Fryer Taco Stuffed Zucchini Boats

Zucchini Boats are simple and take only a few minutes to make.  Plus, they’re loaded with veggies making them a healthy dinner to feed your family on busy nights.  
 
Zucchini is high in antioxidants and has many heart-healthy benefits, such as decreasing the risk of stroke and lowering blood pressure and cholesterol.  Many other vegetables that you could use as toppings have these same or similar benefits.  Who knew that Taco Night could be heart healthy?

Ingredients You’ll Need To Make Taco Stuffed Zucchini Boats:

  • zucchini
  • olive oil
  • salt
  • pepper
  • taco meat
  • cheddar cheese
  • diced tomatoes
  • sliced olives
  • sour cream

My Taco Meat recipe is a healthy alternative to packaged seasoning.

  1. Remove end from zucchini and slice in half lengthwise
  2. Use a spoon to scoop out seeds and and make a hallow canal down the center
  3. Drizzle with olive oil and salt and pepper
  4. Place in air fryer at 380 degrees for 8-10 minutes until cooked through and crisp tender
  5. Fill each “boat” with taco meat and cheese and return to air fryer for 1-2 minutes
  6. Top with tomato, olives and sour cream or as desired

Pro Tips…

Customize your toppings to please everyone in the family.  Try adding fresh cilantro or chopped peppers to your boats.  You could also drizzle ranch dressing over them.  Really, the sky’s the limit!

  • 1 large or 2 medium zucchini
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup taco meat
  • 2 oz shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced olives
  • 2 tablespoons sour cream

Instructions
